Abstract

Climate change and a rapidly growing population are driving an increase in food demand, posing a significant threat to the national food economy. Research on artificial intelligence (AI) has garnered considerable attention in recent years and is experiencing rapid growth in the food industry. AI technologies in the food industry are becoming more perceptive, surpassing the boundaries of traditional approaches. This paper presents a comprehensive review of the application of AI in the food industry. It provides a concise overview of AI technologies and their impact on the future of the food industry. These include the role of AI in agriculture (soil and field monitoring, crop management, seed selection), food recognition, calorie measurement, food safety (hygiene and traceability), and the supply chain. Also, special emphasis is laid on future research directions of AI in the food industry.
